Quick and Easy Recipe: Black Bean Soup

At lunch yesterday, my good friend Nicole Dean told me about her daughter’s favorite food, black bean soup! Of course, I asked for the recipe (because you know how I feel about black bean soup). Here’s the scoop:

Quick and Easy Black Bean Soup

Here’s what you need:

2 stalks celery

1 onion

1 can chicken stock

2 cans black beans

Saute chopped celery and onion in olive oil until soft. Add a can chicken stock, and a can (or two) of drained black beans. When it’s heated through, blend to desired chunkiness using an immersion blender.

Serve with shredded cheese, chips for dipping, sour cream, chopped onions… whatever your little heart desires! Enjoy!
