Super-Easy Red Wine Vinaigrette

A salad dressing this easy should be illegal!

Here’s a super-easy vinaigrette that can be whipped up in just a few minutes. Train your kids to make this — they’ll impress future dates for years to come! Or do it table-side and show that this homemaking thing ain’t got nothin’ on you!

5 T red wine vinegar

1 green onion, minced

1/4 tsp sea salt

1/4 tsp freshly ground pepper (I never could figure out how to measure freshly ground pepper, so just give it three or four twists with the ole’ grinder and call it good)

2 T extra-virgin olive oil

Combine everything but the oil in a medium bowl. Slowly stir in the oil until well blended. Use immediately or store in airtight container in the fridge until ready to use.

    Vinaigrette is easily mixed in a screw-top jar – then you can shake everything together and any excess is already in a storage container.

    I like to add 1 tsp whole-grain mustard and 1 tsp honey to my dressings, and would use a clove of garlic (minced) instead of the green onion. It’s fun to change up the recipe to find what you and your family like best.
