Simple Scrambled Egg Mix-Up

Tired of all your eggs tasting the same?

Having the same old, same old every mornings? Try these simple egg scrambles for a twist on the regular breakfast routine:

1. Ham, cheddar, and green onions. Saute diced, cooked ham in a bit of butter, then add eggs. Just before eggs are done, add shredded cheddar cheese and chopped green onions. Add salt and pepper to season.

2. Feta and spinach. Saute frozen, thawed spinach or fresh spinach until wilted. Add eggs. Just before set, add feta and season with salt and pepper to taste.

3. Onions and mushrooms. Saute sliced red onion and sliced mushrooms in butter until soft. Add eggs; season with salt and pepper.

4. Migas. Mix salsa with eggs and set aside. Saute corn tortillas torn in small pieces in olive oil or butter. When softened, add chopped onion and saute until translucent. Add egg/salsa mixture, and salt and pepper if desired.

    Yum! You might also try smoked salmon, green onions, and cream cheese. This works great in a frittata. Really, eggs are so versatile.
